Raw Spoodles (Sweet Potato Noodles)

1) Peel 1 sweet potato (around 200g) and attach to a spiralizer, using the medium blade.

2) Spiralize the sweet potato until you've used as much of the vegetable as possible. 

3) Put the sweet potato spirals into a bowl and spoon over 2 tbsp of red wine vinegar and 1 tbsp of extra virgin olive oil. Stir everything together and set aside for at least 4 hours to marinate before eating. 


If you don't have a spiralizer at home, you can create spoodles by using a peeler to peel off pieces of sweet potato and then use a knife to cut the pieces into thin noodles. 



1 medium Sweet Potato

2 tbsp Red Wine Vinegar

1 tbsp Extra Virgin Olive Oil
