Method

Mashed Sweet Potato

1) Peel 1 sweet potato (around 200g) and chop into 2.5cm chunks.

2) Put into a small pan of cold salted water. Cover, bring to the boil then simmer for 10 minutes until tender.

3) Drain, then mash with 1tsp butter.

OR

Follow the cooking instructions for the baked sweet potato. Once cooked, scoop out the inside of the sweet potato and discard of the skin. Mash the sweet potato flesh with 1tsp butter.
