Fried Spoodles (Sweet Potato Noodles)

1) Peel 1 sweet potato (around 200g) and attach to a spiralizer, using the medium blade. Spiralize the sweet potato until you've used as much of the vegetable as possible. 

2) Heat 1-2 tbsp vegetable oil in a pan over a medium heat and add the sweet potato spirals.

Cook for approximately 3 minutes, tossing every now and then until all the spirals are cooked and turning golden.

4) Season with salt and serve. 

Tip

If you don't have a spiralizer at home, you can create spoodles by using a peeler to peel off pieces of sweet potato and then use a knife to cut the pieces into thin noodles.
